I usually take lunch to work with me. It’s the only way to have any control over what I am eating.

I usually keep a little stash of homemade ready meals in the freezer. This might seem like a lot of work, but trust me, it is worth it. You know that morning when You wake up really late???

Yes that day when You have no time to prepare a healthy lunch.

It’s so easy to just grab it, and rush out the door.

By lunchtime it will be defrosted, & ready for the microwave.

For the days when I have time to make my lunch, I usually go for salads.

This was a vegetarian salad from my Instagram account.

I used walnuts and chia seeds for my protein in this one.

I’m not a vegetarian but I do enjoy veggie meals, for a change.

This one was a large  grilled mushroom with mozzarella, peppers , tomatoes & pesto.

I had some boiled potatoes left over from dinner.

I just sliced one up and sprayed it with one cal spray & baked in the oven.

Add a little bit of tossed salad, & your good to go.

Goats cheese salad with avocado and grapes.

Baby spinach, cucumber & peppers in a tossed salad.

Easy peasy.

This was a cinnamon and Raisin Bagel toasted with almond butter, strawberries, grapes and a strawberry smoothie.

So there You have a few Veggie lunches. Whether You are vegetarian or not You can still enjoy these handy lunches on the go.
